In view of the profound transformation of the French dairy sector due to changes in public policies, consumption patterns and societal expectations, this project aims to identify and characterize the technical, organizational and institutional levers used to supporting an agricultural and ecological re-localization of the dairy sector. It focuses on two contrasting dairy areas: the dynamic Breton area and the sparsely populated South-West, which is in decline. This project adopts a systemic and interdisciplinary approach, considering the sectors in their globality, from start to finish, and within a historical perspective. Using exhaustive and geolocalized statistical data on dairy farms as well as on dairy collection and processing companies over the period between 2000-2020 is required to characterize the changes taking place and the factors which underpin these, in their spatial diversity.
